When I go to Love + mode I sometime play janken with Rinko to earn AP. Are there other mini-games that can be unlocked as you play through the game?
If so, what are they?

Crap...
I'm really getting sick of janken, especially since there is a pattern to winning.

With Rinko her first choice is usually scissors and her second is paper

xD Dunno. Maybe is random per game cart? Or girl, rather. On the text side during janken
"Start with rock... rock scissors..." Filled in the blank and always won 0o eventually I thought it would change but so far it hasn't.

Hmmm I haven't paid attention to the text on the left side. Although she always says "start with rock" and I do.

Actually, I sometimes wonder if the game decides who wins automatically. For example, I make sure Manaka's "emotion level" is completely full all the time, and I haven't lost a game with her in about a month. (I'm not joking, I'm dead serious!) Though, when I picked up an old back-up of my game and managed to get her up to a low , she seemed to win 1/3 times, no matter what I picked.

I tried picking the missing item on the left screen, it is always paper, yet Rinko never recognizes it when I say "pa" , she says that doesn't exist. I don't know if I am saying it right. It seems for me Rinko always chooses scissors, then paper, then rock.

You're saying it correctly, right? You pronounce the a like you would in "awe".

I'm not sure if I am pronouncing it correctly or not. I pronounced it like "Pah" and like "Pay" and neither worked, but sometimes when I choose rock and say "goo" she will treat it like I chose paper.
It's a mystery.
P.S. when you say her "emotion level" is full, do you mean the personality bar is full (the blue, pink or green bar) or do you mean that she has a great big bouncing smiley face beside it?

I'm talking about the smiley face. It eventually caps when you go high enough.
Also, you think it might be an issue with your mic?

Actually it's that simple: when the big smiley is bouncing the affection is at max.

Also, you can tell when it "caps" because you won't see blue arrows going up when you do things she likes.
